I would like to introduce my first

Cheese and Wine pairing for the week.   The Red Leicester (pronounced LES-ter) is an English Cheddar. It has sweet red bell peppers and chili. It an intriguing mixes of spice and sweet, with a creamy texture. I would pair well with a dry Merlot, a Rioja or a Shiraz/Syrah.   It’s the perfect addition to a Buffalo chicken pizza or sandwich shredded. It makes and excellent substitute for pepper jack cheese on a party platter. Personally, I am going to embark and try it with Red pepper Pasta. You can only find this cheese at Trader Joe’s.

 

I would suggest the Montebuena Rioja wine to serve with this cheese.WP_20140801_020[1]

I would also suggest a Washington State Boom Boom Syrah or a Maryland Linganore Steeple Chase Red if you want a more Sweeter wine.
